Along the Turquoise Coast the party starts early; things start filling up by 10 at night in the Party Center, the nightlife epicenter, where the most famous clubs are gathered, like Coco Bongo, Señor Frog’s, or Mandala Beach. These clubs usually host great shows, and the party goes until the early morning. Get ready to shake your hips.

Ceviche de Caracol

This is the most emblematic dish for anyone from Cancun and Quintana Roo. This delicacy will drive you mad, after trying it on Isla Mujeres or any of the beaches, so here you’ve got the recipe to relive your journey whenever you want:

     Ingredients:

  • 2 large snails 
  • 3 finely diced red tomatoes
  • 1/2 onion, finely diced
  • 1 cup of seedless lemon juice
  • 1 seedless habanero chili, finely diced
  • Soy sauce
  • Cilantro
  • Vinegar
  • 1 tablespoon extra virgin olive oil
  • White pepper
  • Tabasco sauce

    Directions:

  1. Tenderize the snail with a mallet, and cut it into small pieces.
  2. Heat a pot of water, and as soon as it boils, take it off the flame and add the snail.
  3. Let the snail stand in the water until it cools, then drain.
  4. In a bowl, mix the lemon, snail, onion and a little white pepper, vinegar, cilantro, and a touch of soy sauce. 
  5. Cover with plastic wrap and let stand 3 hours in the refrigerator.
  6. Mix the tomato, habanero chili, and a splash of olive oil. Add it to the mix.
