Boragó

Specialty: signature cuisine.

Chef Rodolfo Guzmán affirms that this restaurant "is not based on technique, but on the flavor of the territory". Hence, its menu focuses on Chilean endemic products: wild fruits, fungi, 750 types of halophytic algae, stems and roots.

With these ingredients he makes up dishes such as rock vegetables from Punta de Tralca, Patagonian lamb and mille-feuille of wild Patagonian apples, wilted leaves in miso de murra or ice brulée from bitter plants of the Atacama desert.

Boragó is the fifth best restaurant in Latin America and the 27th in the world according to World's 50 Best Restaurants.

Ambrosía

Carolina Bazán and Rosario Onetto, chef and sommelier of Ambrosía restaurant, want to show the history behind each dish, emphasizing on its responsible production process. Hence, the menu changes daily because it only uses seasonal ingredients.

Bazán opened this restaurant along with his family in 2003, but in 2011 she decided to spend a year in Paris and work at Frenchie Restaurant to learn from Chef Gregory Marchand. This French influence is evident in Ambrosia's most sought out dishes.

Since 2014, the restaurant is part of the Latin America's 50 Best Restaurants ranking, and in 2018 it reached 24th place.

Restaurante 99

Specialty: signature cuisine.

It was 200 kilos of onions with sprouts that were going to be thrown away that inspired Kurt Schmidt, creator and chef of Restaurante 99, to prepare pickle, mash, broth and even powder.

The location of this restaurant, ranked 28 on the list of Latin America's 50 Best Restaurants, is small and rustic. Since its opening in 2013, it offers high cuisine techniques and seasonal products with moderate prices.

The lunch menu changes every day; in the evening, there is a tasting menu of 6 or 9 courses.

Typical Dishes

Pippin with mashed potatoes

Along with hake, golden conger and salmon, pippin is Chile's favorite fish. Its white and firm flesh is served with sweet potato gratin on the side.

Completo with avocado

This is one of Chile's fast food specialties. A variation of hot dog that is not only larger but also accompanied with an avocado and sauerkraut puree.

Conger chowder

Neruda wrote a poem about this soup served in clay dishes. It's made with conger, a fish with a mild flavor, cut into medallions and submerged in lemon. The caldillo is served with chopped cilantro leaves.

Rodolfo Guzmán

Chef and creator of the gastronomic concept of Boragó, Guzmán sees his territory as the center of his work. With that in mind, he founded the restaurant in 2006 that currently ranks among the most important in the world. In addition, he helps train other future chefs in collaboration with José Miguel Aguilera—doctor in Food Science and National Award—, in his Lab Kitchen at the Catholic University.

Likewise, it has a digital encyclopedia called Conectáz, a free app that provides information about its specialty: stems, roots, fungi and algae, among others, as well as how they are cut, cooked or eaten.

Pebre is a garnish similar to the Mexican pico de gallo. It’s usually great with empanadas, beans with noodles, humitas, pork ribs, roast chicken and meat, but you can also have it over a slice of bread.
