A menu crafted by Chef Álvaro Clavijo! 

With an outstanding background in international cuisine, Álvaro Clavijo founded his restaurant El Chato in 2017 in Bogotá, Colombia, recognized by The World’s 50 Best Restaurants. His cooking balances fire and the flavors of his homeland, bringing diversity and elegance to every dish. .

The menu, available on selected Business Class flights, is prepared using local ingredients that pay tribute to haute cuisine at over 36,000 feet.

Alvaro Clavijo and Manuel Mendoza combine international techniques with local ingredients to create a completely distinct culinary experience. 

In this collaboration, Manuel highlights Caribbean flavors through contemporary techniques featured in the dishes of his restaurant Manuel Cocina, ranked among the top 50 restaurants in Latin America.

Americas Business Class 

This experience is the result of a unique collaboration between renowned Salvadoran chefs Alexander Herrera and Gracia Navarro, founders of El Xolo, and Colombian chef Álvaro Clavijo. 

Celebrating native corn and the culinary heritage of El Salvador, El Xolo received the National Gastronomy Award and was named Restaurant of the Year at the VI Gastronomy Gala in 2024. That same year, it ranked #56 on the prestigious Latin America’s 50 Best Restaurants list. 

Now, this authentic culinary vision takes to the skies, offering an unforgettable sensory journey onboard.

Alvaro Clavijo and Gonzalo Aramburu join forces to elevate the flavors of Colombia and Argentina. Through local ingredients, they transform each dish into a gastronomic experience that blends innovation and tradition. 

Gonzalo, creator and chef of Aramburu, a restaurant recognized with two Michelin stars and listed among Latin America’s 50 Best Restaurants, invites you to journey across the Pampas, the Andes, and the Argentine Sea in every bite. 

Together, they create a culinary voyage where the identity of both countries meets at the table.
